I do sometimes... It allows you to play matchups. And if we're comparing fantasy prowess, take a look at my profile - I'll blow your f**king mind... I won one league 4-years in a row - I had the #1 seed last year during my run at number 5, but lost in the playoffs on some flukey s**t.
A good reason especially if you don't have a top rated defense like Steelers or Ravens. If you have one of those guys, you pretty much just need a D for one week and you pick the one with the best match up. If you have a average to above average D, you need two to play the match ups.
