would have been great if he was drafted as Mr. Irrelevant.... but considering this is his college coach, who wouldn't like the move?

Are you really that callous? It's a kids former coach extending him an honor that the kid would never have received because of a freak accident. Kid deserves it, he was told he'd be a quadriplegic for the rest of his life and within a year he is walking with assistance and on his way to being able to do so on his own.

Roster spot? It was a 1 day contract, get over it, it was completely ceremonial. Its not like we'll see "1st cuts: Eric LeGrand" on the the press release after the first pre-season game. He was given a 1 day contract that says the Bucs know what you went through so even though it is no where near comparable of a gesture, were signing you for 1 day so you can "retire as an NFL player". Read up on the story before you call it a PR stunt.
