He didn't call Floyd a monkey someone asked him about Rocky 3 and he made a comment if that's the ones with the dancing monkeys in the gym. Whether he was talking about the overly elaborate 1st training scene or Apollo's gym is anyone's guess.

Look at who's promoting the fights UFC, Mayweather Promotions. Boxing has competition amongst it's promotions to negotiate a higher % of the payday or in Floyd's case he cuts out that middle man entirely.

His promotion company who gets their share from ppv, arena, etc outlets. The numbers he throws out may be inflated because of that but he did post a pic of a 100 mil check from Mayweather promotions for the PAC fight.
