Of course 49ers fans would dismiss the Vikings stadium (and others like it in the league) as meh. It's like when you watch those tv shows of the rich and famous, and they show their big fancy houses and cars...and you just say "meh it's not all that. I dont need to have one of those." Can't appreciate what you don't have, and given our dud stadium looks no better than a glorified college venue, I'm not surprised that some 49ers fans would dismiss teams like Dallas, Zona, Vikings, etc as "meh" sites to play.
Reality is that Santa Clara has really nothing to show except for solar panels and wifi capability (which benefits only corporate thugs). So it's easy to when you see great stadiums like The Cowboys and Vikings because we dont have anything comparable.

Those stadiums are concrete tombs, once you are inside and In between the outside and seats there really nothing but concrete hallways that are clustered with crap. Except for the outside exterior those stadiums are really nothing
The 49ers actually took fans advice and made it more open especially in the walkways where people bottled necked everywhere at candlestick

I guess this would make sense if we had never been to any of those stadiums. Which would be completely false, but nice try. Have you been to any of the stadiums you mentioned or even Levi's?
