Can someone explain to me why on both NFL and ESPN sites the Seahawks are listed as the Wild Card team with the Cowboys one seed out of the Wild Card?
This is especially puzzling to me since Head to Head matchup is the first tie-breaker and the Cowboys won the regular season head to head matchup between the Seahawks and Cowboys

It's because there are 3 teams tied at 8-4 (SEA, DAL, DET) and because they haven't all played each other they don't use head-to-head as a tie breaker they use best conference record. If there are two teams tied THEN you use head-to-head as the tie breaker.
