He was a good and enthusiastic blocker in college, doubt that he all of a sudden forgot how to do it or can't figure it out in the pro's. It just seems like a continuation of this coaching staff's bias against younger players on offense.
I was just speculating on a reason why they might stay with Manningham over Patton. It's not just having blocking ability, the receivers need to understand the blocking scheme for the particular play and possibly that could give Manningham, with his greater experience in the offense, an advantage.
As far as we know, maybe they are already planning to play Patton next Sunday.
