I've done a ton of IDP leagues and I'm never sure when the appropriate time to draft individual defensive players is.
I've seen Patrick Willis go in the 5th round. I've seen defensive players last until the 14th round.
It really depends on what everyone else does.
I have a draft strategy. But that strategy will change depending on what you guys do.

^ You forgot James Harrison. He should be the first or second defensive player taken.
He not only can put up 16 sacks and 100 tackles.
But he also forces turnovers.
And every forced fumble, fumble recovery or interception is worth 6 points (the equivalent of an offensive touchdown).
